Astaxanthin monopalmitate degradation resulted in a mixture of free and palmitate apo-astaxanthins. Carotenoids are important biological active, and may regulate cellular differentiation, growth control, photooxidative protection, cell membrane stability, photosynthesis, vision process and nutrition[1][2].
