Agaritine is a compound isolated from the commonly cultivated commercial mushroom Agaricus bisporus. Agaritine is hydrolyzed by an enzyme system present in the mushroom into 4- (hydroxymethyl) benzenediazonium ion, which is a carcinogen in mice.
