EK is the catalytic subunit of bovine enterokinase, which is expressed by E. coli and purified to yield a high enzyme activity preparation. EK recognizes the sequence Asp-Asp-Asp-Asp-Lys (DDDDK) and cleaves the peptide bond after the lysine residue.
