Description
Fructose-phenylalanine (Fru-Phe) is a non-competitive inhibitor of angiotensin-converting enzyme (ACE) with an IC50 of 0.19 mM, exhibiting antioxidant properties. It forms a stable complex with zinc ions (Zn2+) at the active site of ACE, effectively inhibiting the conversion of angiotensin I to angiotensin II, thereby reducing blood pressure.
